Healthy Meals (001): Mexican Flatbread Pizza

As you all know, I'm a bit of a foodie.  I like learning about new recipes and specifically, healthy ones.  I'll share one of my latest concoctions (yes, I used that word deliberately).  I hadn't spent much time planning my meals this week, so each evening was an adventure in the kitchen as I tried to pull something together. 

Mexican Flatbread Pizza
  • 3-4 ounces of chicken
  • 1/8 C black beans, mostly drained, but not rinsed
  • Assorted vegetables - I used diced tomatoes and red onion, but you can also include others
  • 1/2 avocado, diced
  • 1/4 tsp southwest seasoning
  • 1-2 Tbsp sour cream (I used fat free)
  • 1 whole wheat flatbread
1. Mix chicken, black beans and seasoning together in bowl.  Heat for 1-2 minutes in microwave, until heated through.
2. Toast flatbread on low until crispy.
3. Top with chicken mixture, veggies, avocado and sour cream.
4. Dig in!

Notes: This meal is high in protein and has plenty of monounsaturated fats from avocado, known to be a heart healthy food.

  3. This looks great! Funny that you use the word "concoction".....I tend to create a lot of Mexican type concoctions!! I am always looking for healthy "concoctions".....I will be putting some recipes on my blog soon! http://www.pamrunsmarathons.blogspot.com/ My blog is fairly new and in progress! BTW, Great blog!
