Healthy Meals (004): Ravioli with Pumpkin Sauce

As I've mentioned previously, I'm a big fan of food and typically seasonal foods.  Pumpkin is one of my absolute favorite flavors and it's rich in nutrients like fiber, beta-carotene, potassium and Vitamin C.  As you can see, it's packed with all sorts of goodness that are critical to a runner's diet.  This also is a great recipe for carb loading.

Ravioli with Pumpkin Sauce

  • 1 (15 oz.) can pumpkin
  • 1 1/2 C chicken broth
  • 3 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 20 oz. package cheese ravioli (or you can use frozen)
  • 1/4 C low fat sour cream
  • 1/4 C freshly grated Parmesan cheese
  1. Bring a large sauce pan of water to boil.
  2. In another saucepan, stir together pumpkin, broth, sugar, butter, garlic powder, ginger, cinnamon, and nutmeg in a medium saucepan.
  3. Simmer pumpkin mixture over a medium heat, stirring occasionally until heated, about 10 minutes.
  4. Add ravioli to boiling water and cook according to package directions. Drain ravioli and set aside.
  5. Remove pumpkin mixture from heat and stir in sour cream if desired.
  6. Spoon ravioli on plates, top with sauce, and sprinkle with cheese.
This recipe is very simple and I bet you have most of these ingredients in your fridge and pantry!  Serve with a tossed salad with a light vinaigrette.
