Healthy Meals (005): Twice-Baked Sweet Potatoes

Keeping with our theme of sharing nutrition tips for National Nutrition Month, I wanted to share one of my favorite recipes.  We actually made these for Thanksgiving this past year and they were a huge hit!  I love sweet potatoes and this is a perfect dish with baked or roasted poultry and a green vegetable like broccoli or asparagus.  These are made with fat free cream cheese or you can substitute nonfat Greek yogurt for an added protein boost. 

Sweet potatoes are a great carbohydrate for runners.  They are a good source of Vitamins B6, C and D; Potassium; Iron; and Magnesium.

Twice-bBked Sweet Potatoes
  • 2 sweet potatoes, medium in size
  • 1-2 Tbsp fat free cream cheese or substitute nonfat plain Greek yogurt
  • 1 Tbsp brown sugar
  • 1 tsp cinnamon
  • 1 pinch nutmeg
  • Salt and pepper, to taste
  • Splash of skim milk - about a tablespoon
  1. Preheat oven to 425 degrees.  Slice sweet potatoes long ways and place face down, on a baking sheet, sprayed with cooking spray.  Bake for 30-35 minutes.
  2. Scoop out insides of potatoes, being careful not to puncture the skin.  Mash potatoes in medium bowl.  Add all ingredients and mix thoroughly.  Scoop mashed potato mixture back into skins and bake for about 8-10 minutes more, until tops brown slightly and heated through.

  4. I love making twice stuffed potatoes for a crowd....I've never thought to do a sweet potatoe version! I'm going to have to try this! Thanks for the recipe~
