Fall Pumpkin Treats

Every fall, pumpkin flavored foods and beverages are a favorite for both Christine and me. We also get into the spirit of the fall holidays by spoiling our dogs with toys for each season/holiday.

 One of my favorite ways to enjoy the tasty pumpkin flavor is by baking Pumpkin Bars.  Last year, our hostess for my book club made these for us and we all went crazy for them.  Any bar that is frosted is especially tasty, especially when it includes pumpkin. I thought I would share the recipe with you since it is a simple, quick dessert that everyone loves!

                                                          Pumpkin Squares

1/2 cup butter                                 1 cup flour
1/2 cup white sugar                         1 tsp. cinnamon
1/2 cup brown sugar                       1/4 tsp. nutmeg
2 eggs                                             1 tsp. baking powder
1 small can pumpkin                        1/2 tsp. baking soda
                                                       1/4 tsp. salt

Icing:
1 pkg cream cheese softened
1/4 cup butter
1 tsp. vanilla extract
2 cups confectioner sugar

Cream butter and white sugar.  Then beat in brown sugar, then eggs.  Slowly add the pumpkin and remaining ingredients until blended.
Place in 9x13 pan. Bake at 350 degrees for 25 minutes.

Cool and Frost!
