Baking and running oh my!

This week is super busy with just a week until Christmas and less than 3 weeks until Dopey Challenge!  The last few days have been light on exercise for me as I dread  anticipate my simulation for the January races. This Thursday through Sunday I have 3,6,12 and 24 miles on my running calendar.  In the meantime, my days have flown by with gift wrapping and baking. Yesterday I made a peppermint cheesecake and a coffee cake for Christmas morning! Today operation cookie got started and three kinds of cookie dough were prepared. I had time to get one batch baked and the other two will be in the oven tomorrow!  Of course a few made it into my belly, despite my best efforts to refrain.  Who can resist a homemade chocolate chip cookie?

As for my exercise, I took two days off, Sunday, post race and Tuesday to be ready for the upcoming mileage.  Last year, I struggled mightily with the last Goofy Challenge weekend training and I am not excited at all about the prospect of running 45 miles in just 4 days.  But I will do it!  Christine arrives on Saturday afternoon so we can run survive the 24 mile run together on Sunday.  After that, it is all downhill as we enter the taper zone for Dopey.  I am excited to know that the long journey is nearly over and we can enter those starting corrals knowing we did the best we could to be prepared for the race weekend.  Come on Dopey...we are ready to earn all the medals!

  2. Mmmm peppermint cheesecake sounds delicious :) That is great y'all will have each other to help get through that 24 mile run!! Should definitely help makes things easier, or at least more bearable!

    1. Beast or not, I am ready for Sunday afternoon when we can both eat everything in sight. I am already thinking about the peppermint chocolate candy that I will devour!

  4. That's a whole lot of baking! My in-laws ask for nothing for Christmas but for me to make them cookies so I usually have 6 different kinds. Plus I do a cookie exchange party (so much fun, you should try it!). That peppermint cheesecake sounds delicious!

    It's great that you guys can do that last big long run together. You can do it! :)

I'll be right there with you both (in Spirit!!) as I tackle 12 miles Saturday and 20 Sunday in Chicago land.... reports of snow for Sunday so I may have to do all twenty miles on a treadmill for safety! I don't want to slip in the snow or be scooped up by a plow! GOOD LUCK to you both on Peak Weekend as I have been calling it!! Looking forward to Sunday afternoon when its all over!! -Loren

    1. Thanks Loren, Good luck to you as well and stay safe with snow in your forecast. I do hope we get cool weather for our races at WDW next month. We both have alot more success running in cold weather!
